The Mahjoub family uses Chetoui olives grown in the Mejerda Valley of northern Tunisia. In contrast to current methods of mass-production, these olives are crushed in small batches using a pair of ancient granite millstones. Finally, the olive liquid is skimmed off the top by hand in a process called a la feuille. The finished product is an elegant, unfiltered organic oil.
Recommended Uses: A perfect complement to Tunisia’s healthful Mediterranean cuisine of seafood and vegetebles enhanced by grains and North African spices.
